WHAT I EAT IN A DAY

Good evening.

UPDATE: My health is doing better than it was in September. I still have a long road ahead of me, but my blood pressure and blood sugar have improved since my doctor’s visit in September. If you haven’t read that post, click here to check it out. 

Tonight’s post consists of some of the meals that I create for myself throughout the week now that I’m working from home. Let’s start with a yummy breakfast. One of the things that I changed after my physical was the time that I ate breakfast. In the past, I woke up at 5, and started eating around 5:30 or 6. I read some articles, and later learned that when I would wake up in the morning, I wasn’t hungry. I was thirsty and needed to drink more water. When it was time for me to create healthier habits, that was the first one on my list. I got myself a water bottle to keep by my bed in the morning. 

Now, I eat breakfast at 9 or 10. I’ll make myself a Breakfast Wrap. Here are the items I use in my cooking:

  • Spinach or Tomato Wrap
  • Spinach Leaves- I LOVE SPINACH!!!!
  • ½ of an Avocado
  • 2 Eggs
  • Feta Cheese
  • “Everything But the Bagel” Seasoning
  • Parsley

I remember I wanted to make breakfast, but I didn’t have time to create a full out meal. Looking around in my fridge, I asked myself: 

“What can I make that won’t take me all day in the kitchen, and still taste good?”

So, I fired up the skillet, and fried up my eggs, sprinkling a little parsley and the Bagel Seasoning on top. Then, I place them inside the wrap, drizzle a little Siracha for a kick, and BAM! A tasty, healthy breakfast wrap. With this, I’ll make a fresh cup of coffee, some tea, or drink one of my Trilogy Kombucha, and I enjoy a fulfilling meal. 

Around 2, I’ll eat a Green Apple with a Rice Cake, topped with some peanut butter. From there, around 5, I’ll eat some more fruit, or I’ll drink a meal shake. Other times, if Dad is in the mood for some food, but we don’t feel like cooking, we’ll enjoy a “Cheat Day.” Sometimes, it varies, from Imo’s pizza, to Chinese food from China Kitchen. Don’t worry, it doesn’t happen every day, it occurs every blue moon. Throughout the day, I’ll drink water. In the beginning, it was hard for me to drink water for half of the day. Now, I make it a priority to get my daily water intake. 

Don’t worry, I do eat more throughout the day. I just started writing down what I eat to help me keep track of what I’m putting into my body, so I wrote today’s post based off what I could remember on a piece of paper. These posts will get better though. 😊 I’ll continue to keep you all updated on my progress on my health journey.
